Raw Fettucini Zucchini Alfredo
This meal is rich, creamy, and is really satisfying! It's an excellent transitional recipe for those new to raw foods.
Alfredo Sauce
- 1 Cup Coconut Water
- 2 T. Lemon Juice
- 2-5 Clove Garlic, Peeled (depending on taste)
- 1 t. Salt (or to taste)
- 1 Cup Raw Pine Nuts (soaked overnight) or Sunflower Seeds (soaked overnight)
- 1 Cup Raw Soaked Cashews (soaked overnight)
- 1/4 Cup Young Coconut Meat
- Pepper to Taste
Directions:
Put all the above ingredients in a blender and blend until very smooth.
Other Ingredients:
- 1 Red Bell Pepper, diced
- 1 Cup Fresh Peas Or Frozen
- 6-8 Zucchini (the wider the better for a spiralizer)
Peel the zucchini and make them into noodles using a vegetable spiral slicer, mandoline, or creative knife work.
Put zucchini noodles in a bowl, mix with sauce and top with bell peppers and peas or mix all ingredients together.
Enjoy and have fun~ Try adding things you love, like fresh Basil and or Parsley, Sun Dried Tomatoes, Pine Nuts, etc...
